Roasting the Beets

Preheat your oven to 400°F (200°C). Wash the beets thoroughly to remove any dirt. Cut off the tops and tails, then wrap each beet individually in aluminum foil.

Place the wrapped beets on a baking sheet and roast in the preheated oven for about 45-60 minutes, or until a fork easily pierces through them.

Cooling and Peeling

Remove the beets from the oven and let them cool for about 10 minutes. Once cool enough to handle, unwrap the foil and peel the skins off using your hands or a paper towel.

Dressing the Beets

Cut the peeled beets into wedges or slices. In a large bowl, combine the beets, olive oil, salt, black pepper, and balsamic vinegar. Toss gently to coat.
