Prepare the Cod

Preheat your oven to 375°F (190°C). In a baking dish, melt 3 tablespoons of butter. Place the cod fillets in the dish, season them with salt and pepper, and drizzle with the melted butter.

Bake the Cod

Bake the cod in the preheated oven for about 15-20 minutes, or until the fish is opaque and flakes easily with a fork.

Sauté Spinach and Apples

In a large skillet, melt the remaining tablespoon of butter over medium heat. Add the sliced green apples and cook for 3-4 minutes until slightly softened. Add the baby spinach and sauté until wilted, about 2 minutes.

Prepare the Mustard Cream Sauce

In a small saucepan, combine heavy cream, Dijon mustard, lemon juice, and honey. Cook over low heat, stirring frequently, until the sauce is warmed through and slightly thickened.

Plate the Dish

On each plate, place a generous portion of the wilted spinach and apples. Top with a piece of baked cod and drizzle the mustard cream sauce over the fish. Serve immediately.
