Make the Chocolate Lava Cake

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour.

Melt Chocolate and Butter

In a microwave-safe bowl, melt the dark chocolate and unsalted butter together in 30-second intervals until smooth.

Mix Ingredients

In a separate bowl, whisk together the sugar, eggs, and egg yolks until pale and fluffy. Stir in the melted chocolate mixture and vanilla extract.

Combine and Bake

Gently fold in the flour and salt until just combined. Pour the batter into the prepared ramekins and place them on a baking sheet. Bake for about 12-14 minutes, until the edges are firm but the center is still soft.

Prepare the Raspberry Glaze

In a blender, puree the raspberries and strain to remove the seeds. Mix the raspberry puree with powdered sugar until well combined. Set aside.

Make the Whipped Cream

In a mixing bowl, whip the heavy cream, sugar, and vanilla extract until soft peaks form.

Serve

Let the lava cakes cool for 1 minute, then invert them onto plates. Drizzle with raspberry glaze, add a dollop of whipped cream, and serve with a scoop of vanilla gelato.
