Prepare aromatics

Tofu and vegetables

While broth comes up to a simmer, prepare tofu and vegetables: drain tofu and cut into 1-inch cubes. Slice mushrooms, julienne carrot, and thinly slice bok choy or napa.

When the broth is simmering, add the shiitake mushrooms and carrots. Simmer 3 minutes to begin softening the vegetables.

Gently add tofu cubes to the simmering broth. Stir carefully once to distribute without breaking the tofu. Simmer 2–3 minutes.

Seafood

Pat the shrimp, scallops, and any fish dry with paper towels. Add the seafood to the pot in layers: first the fish pieces (if using), simmer 1 minute; then add scallops and calamari rings, simmer 1–1½ minutes; finally add shrimp and cook until pink and just cooked through, about 1–2 minutes more. Total seafood cooking time should be short (3–5 minutes) to prevent toughness.

Taste a piece of seafood to confirm doneness. Seafood is done when opaque and firm but still tender.

Seasoning and finish

Stir in light soy sauce, oyster sauce (if using), fish sauce (if using), white pepper, and salt. Start with the listed amounts and adjust to taste. Be cautious if you used fish sauce or salted stock.
