Preparation of the Fish

Marinate the Sablefish

In a bowl, combine the smoked mussels, a splash of soy sauce, and sesame oil. Brush the mixture over the sablefish fillets and let them marinate for 30 minutes.

Smoke the Fish

Preheat your smoker to 225°F (107°C). Place the marinated sablefish in the smoker and smoke for about 1 hour or until cooked through and flaky.

Make the Nori Vinaigrette

In a blender, combine the buttermilk, rice vinegar, nori sheets, and a pinch of salt. Blend until smooth and well combined.

Prepare the Garnish

Slice the Cucumber

Thinly slice the cucumber and set aside. Chop the fresh herbs.

Plating

Assemble the Dish

On a plate, place a portion of the smoked sablefish. Drizzle the nori vinaigrette around the fish. Top with the cucumber slices and sprinkle with fresh herbs.
