Grissini Preparation
Activate Yeast
In a small bowl, combine warm water and active dry yeast. Let sit for about 5 minutes until frothy.
Make Dough
In a large mixing bowl, combine flour, salt, and ground sea lettuce. Add the yeast mixture and olive oil. Mix until a dough forms.
Knead
Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.
Let Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.
Shape Grissini
Preheat the oven to 400°F (200°C). Once risen, punch down the dough and roll it out into a rectangle. Cut into thin strips and place on a baking sheet.
Bake
Bake in the preheated oven for about 12-15 minutes or until golden brown and crisp. Let cool.
Assembly
Prepare Toppings
While the grissini are baking, slice pancetta into thin strips and prepare the foie gras slices.
Serve
Once the grissini are cool, serve them with slices of pancetta and foie gras on the side for dipping.
