    Preheat your oven to 200°C (400°F). Season the foie gras with salt and black pepper on all sides.

    Heat olive oil in a skillet over medium-high heat. Sear the foie gras for about 1-2 minutes on each side until golden brown.

    Roasting the Foie Gras

    Transfer the seared foie gras to a baking dish and roast in the preheated oven for about 8-10 minutes, or until it reaches your desired doneness.

    While the foie gras is roasting, mix the native lime juice with Minus 8 verjus in a small saucepan over low heat. Simmer gently for about 5 minutes to combine the flavors.
