Prepare the Rabbit
Season rabbit pieces with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the rabbit and sear on all sides until golden brown. Remove from skillet and set aside.

Sauté Vegetables
In the same skillet, add another tablespoon of olive oil. Add the charred onion and garlic scapes, cooking until they are soft and fragrant, about 5 minutes.

Cook Rabbit
Return the rabbit to the skillet, along with 1 cup of water or stock. Cover and simmer for about 30-40 minutes or until the rabbit is tender and cooked through.

Cook Pasta
While the rabbit is cooking, bring a large pot of salted water to a boil. Add the pappardelle and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

Stir in the toasted pine nuts and chopped black olives. Adjust seasoning with salt and pepper to taste. Serve hot.
