Prepare the Pig's Trotters
Clean the pig's trotters thoroughly and soak them in cold water for at least 2 hours. Rinse and place them in a pot of cold water, then bring to a boil. Once boiling, reduce heat and simmer for about 2 hours until tender.

Cook the Sweetbreads
Soak sweetbreads in cold water for 30 minutes, then remove the membrane and soak in milk for another hour. Blanch in boiling water for 5 minutes, then cool in ice water. Cut into pieces and set aside.

Prepare the Morels and Nettles
Clean the morel mushrooms thoroughly and slice them. For the nettles, wear gloves to remove the leaves from the stems and rinse them well.

Cook the Ziti Pasta
Cook ziti pasta according to package instructions until al dente. Drain and set aside.
Cooking the Dish

Sauté the Aromatics
In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent.

Combine Ingredients
Add the sweetbreads to the skillet and cook for 5 minutes until golden. Then, add the morels and nettles, cooking for another 5 minutes.

Mix with Ziti Pasta
Gently fold in the cooked ziti pasta, seasoning with salt and pepper to taste. Stir well to combine all ingredients.
