Soup Preparation

    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add sliced yellow onions and sauté until they are soft and caramelized, about 30-40 minutes. Stir occasionally to prevent burning.

    Add Garlic and Broth

    Add minced garlic and cook for an additional 2 minutes. Pour in the vegetable broth and add bay leaves, salt, and black pepper. Bring to a simmer and let cook for 20 minutes.

Parmesan Custard Preparation

    Mixing the Custard

    In a bowl, whisk together eggs, heavy cream, milk, grated Parmesan, salt, and nutmeg until well combined.

    Bake the Custard

    Pour the mixture into a greased baking dish and bake in a preheated oven at 325°F (160°C) for 30-35 minutes until set. Let cool slightly and then cut into squares.

Bay Oil Preparation

    Infuse the Oil

    In a small saucepan, combine olive oil and bay leaves. Heat gently over low heat for about 10-15 minutes to infuse the flavors. Strain and set aside.

Assembly

    Ladle the caramelized onion soup into bowls. Top with squares of the Parmesan custard and drizzle with bay oil before serving.
