Evergreen Mornay Sauce

Prepare the Mornay Sauce

Add Milk
Gradually add the milk while whisking to avoid lumps. Continue to cook, stirring frequently, until the sauce thickens (about 5-7 minutes).

Incorporate Cheese
Remove from heat and stir in gruyere and parmesan cheeses until fully melted and smooth. Add the chopped evergreen needles, salt, and black pepper to taste.
Assemble the Lasagna

Layer Ingredients
Preheat your oven to 375°F (190°C). In a baking dish, spread a layer of Mornay sauce on the bottom. Place 3 lasagna noodles over the sauce, then add a layer of shredded rabbit, matsutake mushrooms, heartnuts, and caribou moss. Repeat the layering process until all ingredients are used, finishing with a layer of Mornay sauce on top.

Bake
Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.

Cool and Serve
Let the lasagna cool for 10 minutes before slicing. Serve warm and enjoy!
