Preparation

    Prepare the Quinoa

    Rinse the quinoa under cold water. In a pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Fluff with a fork and set aside.

    Caramelize the Onion

    Slice the onion thinly. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and a pinch of salt, and cook for about 15-20 minutes, stirring occasionally until caramelized. Set aside.

    Prepare the Seeds

    In a separate pan, toast the mixed seeds over medium heat for about 5 minutes, stirring frequently until golden brown. Set aside.

    Prepare the Apple

    Slice the cedar-flavored apple into thin wedges.

Cooking Scallops

    Cook the Scallops

    In the same skillet used for the onions, add 2 tablespoons of olive oil. Pat the scallops dry and season with salt and pepper. Sear the scallops for about 2-3 minutes on each side until golden brown and cooked through. Remove from heat.

Assembly

    Plate the Dish

    On a plate, create a bed of quinoa, top with caramelized onions, seared scallops, and apple slices. Sprinkle toasted seeds and torn pieces of dried seaweed on top. Drizzle with balsamic vinegar and garnish with fresh herbs.
