Crispy West Coast Oyster Ingredients

Method

Cooking Directions

  1. 1

    Prepare the Oysters

Shuck the oysters and place them on a platter. Be sure to keep the oyster liquor in the shells.

  2. 2

    Make the Coating

In a mixing bowl, combine the flour, cornmeal, salt, and black pepper.

  3. 3

    Dip the Oysters

Dip each oyster into the buttermilk, allowing excess to drip off, then dredge in the flour mixture until fully coated.

  4. 4

    Heat the Oil

In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Oysters

Carefully add the coated oysters to the hot oil in batches. Fry for about 2-3 minutes or until they are golden brown and crispy. Remove and place on paper towels to drain.

  6. 6

Prepare the Fennel and Cucumber Salad

In a bowl, mix the chopped fennel, sliced cucumber, lemon juice, and fresh dill. Season with salt and pepper to taste.

  7. 7

    Serve

Plate the crispy oysters with the fennel and cucumber salad on the side. Drizzle with any remaining buttermilk if desired.
