Prepare the Half-Hen

Preheat your grill to medium-high heat. Season the half hen with olive oil, salt, and black pepper. Rub the ramp butter generously over the chicken.

Grill the Chicken

Place the half hen on the grill and cook for about 30-35 minutes, turning occasionally, until the internal temperature reaches 165°F (75°C) and the skin is crispy.

Grill the Romaine

While the chicken is grilling, cut the romaine heads in half lengthwise. Brush the cut sides with olive oil and season with salt and pepper. Grill the romaine for about 2-3 minutes until charred and wilted.

Prepare the Crushed Potatoes

Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and crush them slightly with a fork. Drizzle with olive oil and season with salt and pepper.

Make the Watercress Persillade

In a food processor, combine watercress, olive oil, salt, and pepper. Blend until smooth to create a vibrant persillade.

Plate the grilled half hen alongside the charred romaine, crushed potatoes, and sprinkle with toasted pine nuts. Drizzle the watercress persillade on top.
