Cattail Crêpes

    Make the Batter

    In a mixing bowl, whisk together cattail flour, all-purpose flour, salt, eggs, and milk until smooth. Let it rest for 30 minutes.

    Cook the Crêpes

    Heat a non-stick skillet over medium heat and melt 1 tbsp of butter. Pour in a ladle of batter, swirling to coat the pan. Cook for 1-2 minutes on each side until golden brown. Repeat with remaining batter.

White Chocolate Ice Cream

    Prepare the Base

    In a saucepan, heat heavy cream, whole milk, and sugar over medium heat until sugar dissolves. Do not boil.

    Add Chocolate and Yolks

    Remove from heat and stir in white chocolate chips until melted. In a separate bowl, whisk egg yolks, then slowly add a cup of the warm mixture to temper them. Return to the saucepan, stirring constantly until thickened. Cool and refrigerate for at least 4 hours.

    Churn the Ice Cream

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions. Freeze for a few hours before serving.

    Cook Quinoa

    Rinse quinoa under cold water. In a saucepan, combine quinoa with 1 cup of water and bring to a boil. Reduce heat, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork.

    Mix the Ingredients

    In a bowl, combine cooked quinoa, pumpkin seeds, sunflower seeds, dried cranberries, maple syrup, and cinnamon. Toss to mix well.
