Brewing Instructions
1. Prepare the Mash
In a large pot, heat 5 liters of water to 70°C (158°F). Add the wheat malt and pale malt. Stir well and let it mash for 60 minutes.
2. Sparge the Grains
After mashing, sparge the grains with hot water (around 75°C or 167°F) until you collect about 7 liters of wort.
3. Boil the Wort
Bring the wort to a boil. Add the bittering hops and boil for 60 minutes. 15 minutes before the end of the boil, add the aroma hops, orange peel, lemon peel, lime peel, and coriander seeds.
4. Cool the Wort
After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 25°C (77°F).
5. Fermentation
Transfer the cooled wort to a sanitized fermenter. Pitch the yeast and seal with an airlock. Allow it to ferment for 1-2 weeks at around 20°C (68°F).
6. Bottling
Once fermentation is complete, bottle the beer with priming sugar (about 3/4 cup for carbonation) and let it condition for 1-2 weeks.
