Brewing Process
1. Mashing
In a large mash tun, combine the malted barley and rice with hot water at around 65°C (149°F) and allow it to rest for 60 minutes. This process converts the starches into fermentable sugars.
2. Lautering
After mashing, transfer the mixture to a lauter tun to separate the liquid wort from the solid grain. Rinse the grains with hot water to extract as much sugar as possible.
3. Boiling
Boil the wort for 60 minutes, adding hops at the beginning of the boil for bitterness and additional hops towards the end of the boil for aroma.
4. Cooling
After boiling, cool the wort rapidly to around 20°C (68°F) using a heat exchanger.
5. Fermentation
Transfer the cooled wort to a fermentation vessel and pitch the yeast. Allow it to ferment at a controlled temperature for about 7-10 days.
6. Filtration and Carbonation
After fermentation, filter the beer to remove any solids and carbonate it either naturally or with CO2.
7. Packaging
Bottle or keg the beer and allow it to condition for a short period before serving.
