Brewing Process
1. Mash the Grains
In a large brew kettle, heat 5 gallons of water to 165°F (74°C). Add the pale malt and crystal malt, stirring well. Maintain the temperature at 152°F (67°C) for 60 minutes.
2. Sparge the Grains
After the mash, sparge the grains with hot water to collect 6 gallons of wort in the brew kettle.
3. Boil the Wort
Bring the wort to a boil. Once boiling, add 1 oz of Cascade hops and boil for 60 minutes.
4. Add Flavor Hops
With 15 minutes left in the boil, add 1 oz of Centennial hops and the remaining 0.5 oz of Cascade hops.
5. Cool the Wort
After the 60-minute boil, cool the wort rapidly using a wort chiller or an ice bath until it reaches 70°F (21°C).
6. Fermentation
Transfer the cooled wort to a sanitized fermentation vessel. Pitch the American ale yeast and seal the vessel with an airlock. Allow it to ferment at 65-70°F (18-21°C) for 1-2 weeks.
7. Prepare for Bottling
Once fermentation is complete, dissolve 3 oz of corn sugar in 2 cups of boiling water. Allow it to cool and then add it to the fermented beer to carbonate.
8. Bottle the Beer
Transfer the beer into sanitized bottles, leaving some space at the top. Cap the bottles and store them at room temperature for 1-2 weeks to carbonate.
9. Enjoy Your Beer
