Preparation of Marinade
Make the Marinade
In a medium bowl, combine the olive oil, minced garlic, lemon juice, salt, and black pepper. Whisk together until well combined.
Add Squid
Add the cleaned squid rings to the marinade. Make sure the squid is well coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.
Grilling the Squid
Preheat the Grill
Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stove.
Grill the Squid
Once the grill is ready, remove the squid from the marinade and shake off excess marinade. Place the squid rings on the grill or grill pan. Cook for about 2-3 minutes on each side or until the squid is opaque and has nice grill marks.
Garnish and Serve
Once cooked, remove the squid from the grill and transfer to a serving plate. Drizzle with any remaining marinade and sprinkle with chopped fresh parsley before serving.
