Prepare the Shrimp
In a large pot, bring water to a boil and add a pinch of salt. Once boiling, add the shrimp and cook for 2-3 minutes or until they turn pink. Drain and immediately place them in ice water to stop the cooking process. Drain again and set aside.
Make the Sauce
In a mixing bowl, combine the coconut milk, natural yogurt, lime juice, salt, and black pepper. Whisk until smooth and well blended.
Combine the Ingredients
In a large serving bowl, add the cooked shrimp, diced mango, diced pineapple, finely chopped red bell pepper, and chopped cilantro.
Add the Sauce
Pour the prepared sauce over the shrimp and fruit mixture. Gently toss to coat all the ingredients evenly.
Chill and Serve
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled as an appetizer or light meal.
