Prep vegetables and meat

Dice the onion and both bell peppers into small, roughly equal pieces (about 1/4" dice). Dice the cooked ham or cooked sausage into similar-size pieces. Shred the cheddar if not pre-shredded.

Crack the eggs into a medium bowl, add the milk, salt, pepper, and chopped chives/parsley if using. Whisk until blended and slightly frothy, about 20–30 seconds.

Cook filling

Heat a 10" nonstick skillet over medium heat. Add 1 teaspoon vegetable oil and 1 tablespoon butter. When butter is melted and foaming, add the diced onion and sauté for 1–2 minutes until starting to soften.

Add both diced bell peppers and continue to cook, stirring occasionally, 2–3 minutes until peppers are tender-crisp and onions are translucent.

Add the diced ham or sausage and stir 1–2 minutes to warm and lightly brown. Season the mixture with a pinch of salt and a few grinds of black pepper. Transfer the filling to a small bowl and wipe skillet clean with a paper towel.

Cook omelette

Reduce heat to medium-low and add the remaining 1 teaspoon butter to the skillet. Pour the egg mixture into the skillet and let it sit undisturbed for 10–15 seconds to begin setting at the edges.

Using a spatula, gently pull the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Continue for about 30–45 seconds until the omelette is mostly set but still slightly moist on top.

Scatter the warmed filling evenly across one half of the omelette, then sprinkle the shredded cheddar over the filling. Use the spatula to fold the empty half of the omelette over the filling, creating a half-moon. Cook another 20–30 seconds to melt the cheese and finish setting the eggs, keeping the interior tender.

Toast bread & assemble

While finishing the omelette, spread softened butter on one side of each bread slice. Toast in a separate clean skillet over medium heat, buttered side down, until golden and crisp, about 1–2 minutes. Flip briefly (optional) to warm the other side.

Transfer the folded omelette onto one slice of toasted bread (buttered side facing down). Add leaf lettuce if using and a drizzle of hot sauce or ketchup if desired. Top with the second slice of toasted bread, buttered side up.

Press gently, cut the sandwich in half if you like, and serve immediately.
