Prep vegetables and ham

Peel and finely dice enough yellow onion to measure 1/4 cup. Core, seed, and finely dice the green bell pepper to measure 1/4 cup. Dice ham into small, roughly 1/4-inch pieces to total 1/2 cup. Set vegetables and ham aside in a small bowl.

Beat eggs

Crack 3 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until fully blended and slightly frothy (about 30 seconds).

Cook vegetables and ham

Heat a 10-inch nonstick or well-seasoned skillet over medium heat. Add 1 teaspoon vegetable oil and 1 tablespoon unsalted butter. When butter is melted and begins to foam but not brown (about 30–45 seconds), add the diced onion and green pepper. Sauté, stirring occasionally, until vegetables are softened and beginning to brown, about 3–4 minutes. Add the diced ham and continue to cook for another 1–2 minutes until ham is warmed through and edges lightly browned. Spread the mixture evenly in the pan and reduce heat to medium-low.

Pour eggs and set base

Give the egg mixture a quick final whisk and pour it over the sautéed vegetables and ham, tilting the pan to distribute eggs evenly. Let the eggs set undisturbed for 20–30 seconds until the edges begin to set.

Cook while stirring edges

Using a heatproof spatula, gently push the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Repeat around the pan for about 30–60 seconds until the eggs are mostly set but still slightly soft on top.

Add cheese and finish

Sprinkle 1/2 cup shredded cheddar cheese evenly over one half of the omelette. Allow the cheese to melt for 20–30 seconds. Carefully fold the opposite half of the omelette over the cheese-filled half using the spatula. Cook for another 30 seconds to 1 minute to ensure the center is fully set and cheese melted (keep heat on low to avoid over-browning).

Plate and garnish

Slide the folded omelette onto a warm plate. Sprinkle 1 tablespoon chopped fresh chives or parsley over the top, if using. Serve immediately.
