Method
Pizza
Preheat and prepare
Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while it preheats. If using a baking sheet, lightly oil it or line it with parchment and dust with cornmeal or flour to prevent sticking.
Prepare vegetables
Trim broccoli into small, bite-sized florets (about 1 cup). Thinly slice mushrooms and onion, and slice the tomato into thin rounds. Toss the broccoli and mushrooms in 1 tablespoon olive oil, 1/4 tsp salt and a pinch of black pepper. This helps them roast and reduces moisture on the pizza.
Par-bake dough (recommended)
On a lightly floured surface or piece of parchment, stretch or roll the pizza dough to a 12-inch round (or desired size/thickness). Transfer to a peel dusted with cornmeal or to the prepared baking sheet. Bake the plain dough in the hot oven (on the stone or sheet) for 4–6 minutes until it just begins to set and show tiny golden spots but is not fully browned. This prevents a soggy center when toppings are added.
Assemble pizza
Remove par-baked crust from oven. Spread the tomato sauce evenly over the crust, leaving a 1/2-inch border for the crust. Sprinkle half of the shredded mozzarella evenly over the sauce. Distribute the sautéed onion and garlic across the cheese, then arrange the seasoned broccoli florets and sliced mushrooms in an even layer. Tuck tomato slices on top, then sprinkle the remaining mozzarella. Season with dried oregano, red pepper flakes, remaining 1/4 tsp salt, and 1/4 tsp black pepper. If using, lightly sprinkle grated Parmesan.
Bake until bubbly
Return the assembled pizza to the oven (onto the preheated stone or baking sheet). Bake 8–12 minutes at 475°F (245°C), rotating halfway through, until the crust is golden and cheese is melted and bubbling and vegetables are tender and slightly caramelized. Exact time depends on oven and thickness of crust.
Finish and serve
Remove pizza from the oven and let rest 2–3 minutes. Scatter fresh basil leaves over the top. Slice into 6–8 pieces and serve hot. Drizzle a little extra olive oil if desired.
