Finely dice the half onion (about 1/4–1/3 cup), dice the red bell pepper into small pieces, slice scallions thin (white and green parts separated if desired), and roughly chop the spinach. Crack 4 whole eggs into a medium bowl, add 1 cup egg whites and 2 tablespoons whole milk, then season with 1/4 tsp black pepper, 1/2 tsp salt, 1/4 tsp garlic powder, and 1/4 tsp smoked paprika. Whisk until combined and slightly frothy. Grate or measure 1 cup shredded cheddar.

Cook turkey bacon

Heat a large nonstick skillet over medium heat. Add 1 teaspoon olive oil and swirl. Lay 6 slices of turkey bacon in a single layer. Cook 3–4 minutes per side, turning once, until browned and slightly crisp but not brittle. Transfer cooked turkey bacon to a paper towel-lined plate and keep warm. Reserve about 1 teaspoon of drippings in the pan; discard excess.

Sauté vegetables

Reduce heat to medium-low and add 1 tablespoon unsalted butter to the skillet with the reserved drippings. When butter melts, add the diced onion and red bell pepper. Sauté 3–4 minutes until softened and translucent. Add the chopped spinach and sliced scallions (reserve some scallion greens for garnish if desired) and cook 1–2 minutes until spinach wilts. Season the vegetables lightly with a pinch of salt and pepper. Transfer the vegetables to a bowl and spread out evenly in the skillet if making a single large omelette-style egg layer, or leave them in the bowl if you’ll make scrambled-style eggs.

Cook eggs

Wipe the skillet quickly with a paper towel if there's excess moisture, then return to medium-low heat and add a small pat of butter or a quick spray of oil to prevent sticking. Pour the whisked egg mixture into the hot skillet and let it sit undisturbed for 20–30 seconds until edges begin to set. Using a spatula, gently push set edges toward the center, tilting the pan so uncooked egg flows to the edges (scrambled method).

When eggs are still slightly runny but mostly set (about 1–2 minutes), sprinkle the sautéed vegetables evenly over the eggs, then crumble or chop the cooked turkey bacon and distribute it over the top. Sprinkle 1 cup shredded cheddar cheese evenly.

Cover the skillet with a lid for 30–60 seconds to help the cheese melt and the eggs finish cooking, or fold the eggs in half like an omelette and let sit another 20–30 seconds. The internal eggs should be fully set but still moist — about 2–3 minutes total cook time after adding vegetables.

Slide the eggs onto a cutting board or plate. If you made a large omelette, fold and transfer; if you made scrambled eggs, portion onto plates. Garnish with reserved scallion greens, 1 tablespoon chopped fresh parsley, and optional 2 tablespoons cotija or feta crumbles. Adjust seasoning with extra salt and pepper to taste.

Serve immediately as a breakfast side. Leftovers: cool completely, store in an airtight container in the refrigerator for up to 3 days; reheat gently in a skillet over low heat or in 30-second bursts in the microwave.
