General prep
Bring eggs to room temperature for 5–10 minutes if refrigerated. Crack eggs into a small bowl if making over-easy/over-medium/over-hard or into separate bowls if you prefer to check for shells or make fried eggs one at a time.
Scrambled eggs (soft)
Whisk the 2 eggs with 0.25 tsp salt and 0.125 tsp pepper until uniformly blended and slightly frothy. Heat a nonstick skillet over medium-low heat and add 0.5 tbs neutral oil and 0.5 tbs butter. When butter melts and foams but does not brown, pour eggs in. Let eggs set at the edges for about 10–15 seconds, then use a silicone spatula to gently push cooked portions from the edges toward the center in a folding motion. Continue gently stirring and folding until curds are soft and slightly runny — about 1.5–2 minutes. Remove from heat while slightly underdone; residual heat will finish cooking. Plate and garnish.
Fried eggs (sunny-side up)
Heat a nonstick skillet over low-medium heat and add 0.5 tbs neutral oil and 0.5 tbs butter. Once butter foams, gently crack each egg into the skillet, spacing them to avoid touching. Season each with a light pinch of salt and pepper. Cook undisturbed until whites are set but yolks remain runny, about 2–3 minutes. For a slightly set top without flipping, cover the pan with a lid for the last 30–45 seconds. Remove with a spatula and plate.
Fried eggs (over-easy / over-medium / over-hard)
Follow the same initial steps as sunny-side up. When whites are set around the edges and mostly opaque on top (about 2–3 minutes), carefully flip each egg using a thin spatula. For over-easy cook 15–20 seconds after flipping (runny yolk). For over-medium cook 30–45 seconds (soft-yolk). For over-hard cook 1–1.5 minutes (fully set yolk). Season with salt and pepper and transfer to plate.
Poached eggs (quick stovetop)
Bring a medium saucepan of water to a gentle simmer and add a splash (about 1 tsp) of white vinegar if desired. Crack one egg into a small cup. Stir the water to create a gentle whirlpool and slip the egg into the center; repeat for the second egg if there is room. Poach at a gentle simmer for 3 minutes for a soft runny yolk or 4 minutes for slightly firmer yolk. Remove with a slotted spoon, drain on paper towel, season with salt and pepper, and plate.
Cooking fat
Use the combination of 0.5 tbs neutral oil and 1 tbs butter (or split as suggested above) to heat the pan. The oil raises the smoke point and prevents butter from burning while butter adds flavor. Heat over low-medium depending on method: low-medium for scrambled or poached edges, medium-low for sunny-side up. Adjust heat slightly to keep butter foaming but not browning.
