Cut and freeze

Trim the mozzarella block into 12 evenly sized sticks about 3/4 inch by 3/4 inch by 3 inches. Pat dry with paper towels, then toss the cut sticks with 1 tablespoon cornstarch to lightly dust them (this helps the egg adhere). Arrange on a single layer on a tray, cover lightly, and freeze for at least 1 hour (or up to 3 hours). Frozen or very cold cheese prevents excessive melting during frying.

Prepare breading

Set up three shallow bowls or rimmed plates. In bowl 1 combine 1 cup flour and a pinch of salt. In bowl 2 whisk together 3 eggs and 2 tablespoons milk until smooth. In bowl 3 combine 2 cups breadcrumbs, 1 tablespoon grated Parmesan, 1 teaspoon Italian seasoning, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix well.

Dredge cheese

Working with a few sticks at a time (keep the rest frozen), dredge each stick in the flour, shaking off excess. Dip into the egg mixture, letting excess drip back into the bowl. Press into the breadcrumb mixture to coat thoroughly on all sides. For best results, place the coated sticks on a tray and freeze for 20–30 minutes to set the breading; this helps prevent the coating from falling off during frying.

Heat oil

Pour about 3 to 4 cups vegetable oil into a deep, heavy skillet or pot to reach a depth of roughly 1 1/2 inches, or use a deep fryer set to 350°F (175°C). Heat oil over medium-high heat until it reaches 350°F on a thermometer. If you don't have a thermometer, test with a small breadcrumb — it should sizzle and brown in about 30–45 seconds.

Fry the sticks

Fry in small batches (do not overcrowd) for about 60–90 seconds per batch, turning once, until golden brown. Because the cheese is frozen, it will take a short time to melt and the coating will crisp without the cheese bursting out. Use a slotted spoon to transfer fried sticks to a paper towel-lined plate to drain. If necessary, keep finished sticks warm on a baking sheet in a 200°F (95°C) oven while you finish the rest.

Alternative: Bake (lower oil option)

Preheat oven to 400°F (200°C). Place coated sticks on a lightly oiled baking sheet, spray tops with a little nonstick spray, and bake 8–10 minutes until golden, then flip and bake another 4–6 minutes until crisp. Baking will result in less puffed cheese and a slightly different texture but works if you prefer avoiding deep frying.

Warm 1 cup prepared marinara sauce in a small saucepan over low heat until heated through, stirring occasionally (about 3–5 minutes). Stir in chopped fresh basil if using. Transfer to a small dipping bowl and serve alongside the hot mozzarella sticks.
