Preheat and prepare dough

Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while it preheats. Lightly dust a pizza peel or baking sheet with cornmeal or flour. Roll or stretch the pizza dough to a 12-inch round (about 1/4" thick) on a lightly floured surface; transfer to the prepared peel or sheet.

Cook the beef and vegetables

Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and cook 2–3 minutes until softened. Add ground beef and cook, breaking up with a spoon, until browned, about 5–7 minutes. Drain excess fat if necessary. Stir in taco seasoning, salt, and black pepper. Add diced green pepper, chopped jalapeño, and drained diced tomatoes and cook 2–3 minutes more just to soften peppers and meld flavors. Add the rinsed black beans and cook 1 minute to heat through. Remove skillet from heat and set aside.

Assemble the pizza

Lightly brush the stretched dough with a thin layer of olive oil (about 1 tsp) to prevent sogginess. Sprinkle half of the shredded mozzarella evenly over the dough, leaving a 1/2-inch border for the crust. Distribute the warm beef-and-bean mixture evenly over the cheese. Scatter the remaining mozzarella and the shredded cheddar over the top. Arrange the thin Roma tomato slices over the cheese.

Bake

Slide the pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake 10–12 minutes, rotating once halfway through, until crust is golden and cheese is bubbly and lightly browned. Baking time may vary depending on oven and dough thickness; monitor closely after 8 minutes.

Finish and serve

Remove pizza from oven and let rest 2 minutes. While still warm, scatter diced avocado and chopped cilantro over the top. Squeeze the lime juice evenly over the pizza and dollop optional sour cream or crema if using. Slice into 8 pieces and serve immediately.
