Filling
In a medium bowl, beat the softened cream cheese with a fork or hand mixer until smooth.
Jalapenos
Put on gloves (optional but recommended). Wash jalapenos and dry. Slice each jalapeno lengthwise down the middle and, using a small spoon or paring knife, scoop out the seeds and membranes to remove most of the heat. Leave the stem intact if you want a handle; otherwise remove stem.
Pat the pepper halves dry with paper towels. If you prefer milder poppers, rinse the cavity briefly and dry again.
Fill each jalapeno half with the chilled cheese mixture, mounding slightly so the filling reaches the top but does not overflow when breaded.
Breading & Coating
Set up a breading station: place the 1 cup flour in a shallow bowl and season with 1/4 tsp salt and a pinch of pepper; in a second bowl whisk the 2 eggs with 2 tbsp milk until uniform; in a third shallow bowl combine the 1.5 cups breadcrumbs with 1/2 tsp smoked paprika and 1/4 tsp black pepper.
Working with one stuffed jalapeno at a time, lightly dredge it in the seasoned flour, shaking off excess.
Place breaded poppers on a baking sheet or platter lined with parchment. Let them rest in the refrigerator for 15 minutes to set the coating (helps prevent breading from falling off during frying).
Frying
Pour 3–4 cups of neutral oil into a deep, heavy skillet or Dutch oven to reach about 2 inches deep. Heat over medium-high heat to 350°F (175°C). If you don’t have a thermometer, test with a small breadcrumb—if it sizzles and browns in ~30 seconds, oil is ready.
Carefully add 4–6 poppers to the hot oil without overcrowding (work in batches). Fry, turning occasionally, until evenly golden brown and crispy, about 2.5–4 minutes per batch depending on size.
Use a slotted spoon to transfer fried poppers to a wire rack set over a baking sheet or paper towels to drain. Sprinkle lightly with a pinch of salt while hot. Repeat with remaining poppers, letting the oil return to temperature between batches.
If you prefer baked poppers: preheat oven to 400°F (205°C) and bake breaded poppers on a parchment-lined sheet for 18–22 minutes, flipping halfway, until golden and cheese is melted.
Serve
Arrange jalapeno poppers on a platter. Serve warm with lime wedges and ranch or chipotle dipping sauce for garnish and dipping.
Leftovers: refrigerate in an airtight container for up to 2 days. Re-crisp in a 375°F (190°C) oven for 6–8 minutes before serving.
