Warm oil and fry tortillas

Pour 1 cup of vegetable oil into a large skillet and heat over medium-high until shimmering and about 350°F (if using a thermometer). Fry each corn tortilla one at a time for 30–45 seconds per side until crisp and lightly golden but still pliable. Use tongs to transfer fried tortillas to a wire rack or paper towel-lined tray. Sprinkle both sides lightly with 1/2 tsp salt while hot. Keep warm in a low oven (200°F / 95°C) covered with foil while you finish other components.

Sauce (Red or Green)

Roast or boil produce

If making red sauce: halve tomatoes. If making green sauce: keep tomatillos whole. Place tomatoes/tomatillos, the jalapeño/serrano, and peeled garlic in a dry cast-iron skillet or on a baking sheet and roast under a hot broiler or in a 450°F oven 8–12 minutes, turning once, until blistered and blackened in spots. Alternatively, simmer in a small pot of water 6–8 minutes until softened. Remove and let cool slightly.

Blend sauce

Transfer roasted tomatoes/tomatillos, the jalapeño (remove seeds for milder heat), garlic, and half the onion to a blender. Add cilantro, 1/4 cup water (or broth), cumin, 1 tsp salt and 1/4 tsp black pepper. Blend until smooth but slightly textured. Taste and adjust salt or heat. Strain if you prefer a smoother sauce.

Finish sauce on stovetop

Heat 1 tablespoon vegetable oil in a medium skillet over medium heat. Add the remaining chopped onion and sauté 2–3 minutes until translucent. Pour blended sauce into the skillet and simmer 4–6 minutes, stirring, to meld flavors and reduce slightly. Keep sauce warm over very low heat until ready to serve.

Cook eggs

In a nonstick skillet, melt 1 tablespoon unsalted butter over medium heat. Crack eggs individually into the skillet and cook sunny-side up (or over-easy if preferred) until whites are set but yolks remain runny, about 3–4 minutes for sunny-side up. Season eggs lightly with a pinch of salt and pepper. Cook in two batches if necessary so eggs don't crowd the pan.

Assemble platos

Place one fried tortilla on each plate. Spoon about 1/3 to 1/2 cup of warm sauce onto each tortilla, spreading to cover center. Gently place a cooked egg on top of each sauced tortilla.

Finish with toppings

Top each egg with 2 tablespoons sour cream or crema, sprinkled evenly. Scatter 2 tablespoons crumbled queso fresco or cotija over each plate. Add diced avocado if using (about 1/4 of an avocado per serving). Garnish with 1/2 tablespoon chopped cilantro and a lime wedge. Offer hot sauce at the table.

Serve

Serve immediately while tortillas are crisp and eggs are warm and runny. Recommend serving family-style with extra sauce on the side.
