Preheat and prepare
Position an oven rack in the lowest third of the oven and preheat to 500°F (260°C) for at least 45 minutes. If using a pizza stone, place it in the oven while preheating. Lightly dust a pizza peel or baking sheet with semolina or cornmeal.
On a lightly floured surface, stretch or roll the pizza dough to a 12-inch round (or your preferred thickness). Transfer the shaped dough to the prepared peel or baking sheet. Brush the outer 1/2-inch rim of the dough with 1 tablespoon olive oil to help browning.
Sauce
In a small bowl, combine the pizza sauce with the mashed roasted garlic, dried oregano, and red pepper flakes. Taste and adjust seasoning with a pinch of salt if desired.
Using the back of a spoon, spread about 3/4 to 1 cup of the sauce evenly over the dough, leaving the oiled rim bare. Reserve the remaining sauce for another use or extra saucing if you prefer.
Cheeses
Evenly distribute about 2 cups of shredded mozzarella over the sauced dough, leaving some room at the edge. Sprinkle the 1/2 cup crumbled feta evenly over the top, concentrating a little more toward the center so it melts into pockets of tangy flavor.

Scatter the 3/4 cup chopped Canadian bacon and 1/2 cup shredded pepperoni across the cheese layer in an even single layer so they crisp and heat uniformly.
Vegetables
Distribute the sliced mushrooms (1 cup), thinly sliced onion (1/2 cup), sliced black olives (1/2 cup), diced tomatoes (1/2 cup drained), and chopped spinach (1 cup) evenly across the pizza. Try to keep very wet ingredients (diced tomatoes) more centered to avoid a soggy edge.
Lightly season the toppings with the 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1/2 teaspoon dried basil.
Bake & Finish
Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake at 500°F (260°C) for 8–12 minutes, rotating halfway through, until the crust is golden and blistered and the cheese is melted and bubbling. Baking time will vary by oven and stone; watch for desired char.
Remove the pizza from the oven. Drizzle the surface with 1 teaspoon extra-virgin olive oil, then let rest for 2–3 minutes to set. Slice and serve hot.
