Heat a large skillet over medium heat. Add olive oil and let it warm for 20–30 seconds.
Place the sausages in the skillet, spaced evenly. Cook 3–4 minutes without moving so a brown crust forms, then turn and brown on all sides, about 8–10 minutes total depending on thickness.
Once browned, reduce heat to medium-low and add 1 tablespoon butter to the pan. Continue cooking, turning occasionally, until the internal temperature reaches 70–72°C (160–165°F) and sausages are cooked through, about 4–6 more minutes. Remove sausages to a plate and tent with foil to keep warm.
Vegetables & Aromatics
To the same skillet with the rendered sausage fat, add the diced onion and diced red bell pepper. If the pan is dry, add a splash (about 1 tsp) of olive oil.
Sauté over medium heat until the onion is translucent and peppers are softened, about 4–5 minutes, scraping up any browned bits from the sausage.
Seasoning & Finish
Stir in smoked paprika, chili flakes (if using), kosher salt, and black pepper. Cook 30 seconds to bloom the spices.
Slice sausages into 1/2–3/4-inch rounds and return them to the skillet, stirring to combine with the vegetables. Cook together 1–2 minutes to heat through and meld flavors.
If using, squeeze 1/2 tablespoon fresh lemon juice over the skillet and stir. Taste and adjust seasoning with additional salt or pepper as needed.
Turn off heat and sprinkle chopped fresh parsley over the top for color and freshness.
Serving (optional)
Serve the hot beef sausage mixture immediately alongside toasted bread, English muffins, or warm tortillas. Top each portion with a fried or scrambled egg if desired.
For a composed breakfast plate: place two sausage links (or equivalent sliced servings) per person with vegetables, top with an egg, and serve with toast. Garnish with extra parsley and an optional pinch of chili flakes.
