Prepare bread
Spread about 1 tablespoon of softened butter (or 1 tablespoon of mayonnaise) evenly on one side of each slice of bread. These buttered sides will contact the skillet for a crisp, golden exterior.
Cheese
Place 2 ounces (half of the cheddar) on the unbuttered side of two bread slices; add optional American/Swiss slice if using. Reserve remaining cheese to layer between meat and top bread for extra melt.
Protein (choose one of the three variants)
Beef variant (patty or thin steak)
If using a raw beef patty or steak, season with 1/8 tsp salt and 1/8 tsp pepper. Heat a skillet over medium-high heat with 1 teaspoon oil. Cook a 1/3-lb patty 3–4 minutes per side for medium, or cook thin steak slices 1–2 minutes per side until browned. Drain excess grease on paper towel and transfer to plate. If using pre-cooked or deli-style roast beef, warm in the skillet for 30–60 seconds per side just until heated through.
Pork variant (patty or sliced pork)
If starting with raw ground pork patty or pork loin slices, season with 1/8 tsp salt and 1/8 tsp pepper. Cook in a preheated skillet over medium heat with 1 teaspoon oil until internal temperature reaches 160°F (about 4–5 minutes per side for a patty; thin slices 2–3 minutes per side). Drain and set aside. If using pre-cooked pork (ham or roast) warm briefly in the skillet.
Turkey variant (burger or breast slices)
For a turkey burger or raw turkey slices, season with 1/8 tsp salt and 1/8 tsp pepper and cook in a lightly oiled skillet over medium heat until internal temperature reaches 165°F (about 4–6 minutes per side for a burger; thin slices 2–3 minutes per side). For deli turkey, warm 30–60 seconds in skillet.
After cooking and while protein is hot, place cooked protein on top of the cheese layer on each prepared bread slice. Add remaining cheese on top of the protein so it will melt against the top slice of bread.
Seasoning & Optional Add-ins
Assemble & Grill
Top each sandwich with the second slice of bread, buttered side up. Heat a clean skillet or griddle over medium to medium-low heat. Place sandwiches buttered-side-down onto the skillet. Cook 3–5 minutes on first side until golden brown and cheese starts to melt; press gently with a spatula to ensure even contact.
Carefully flip sandwiches and cook the other side 2–4 minutes until golden brown and cheese is fully melted. If cheese needs extra melting without over-browning the bread, reduce heat to low, cover the pan with a lid for 1–2 minutes, or transfer to a preheated 300°F oven for 3–5 minutes.
Remove sandwiches from skillet and let rest 1 minute. Slice in half diagonally and serve immediately.
