Method
Sandwich
Prepare bread and butter
Spread about 1/2 tablespoon of softened unsalted butter evenly over one side of each bread slice. The buttered sides will face outward during cooking. If butter is cold, microwave 5–8 seconds to soften but not melt.
Assemble sandwich
Place one slice of bread, buttered-side down, on a plate or cutting board. Layer the two slices of cheese on the bread so they overlap slightly. If using optional add-ins (tomato, bacon, apple/pear), arrange them on top of the cheese. Lightly season the tomato or fruit with a pinch of salt (about 1/8 tsp) and a dash of black pepper. Top with the second bread slice, buttered-side up.
Cooking
Grill sandwich
Carefully transfer the assembled sandwich to the preheated pan. Cook on the first side for 3–4 minutes, pressing gently with a spatula to ensure even contact. Watch for the bread to turn golden brown and the cheese to begin melting. If the bread browns too quickly before the cheese melts, lower the heat slightly and cover the pan with a lid for 1–2 minutes to trap heat and encourage melting.
Flip and finish
Flip the sandwich and cook the second side for another 2–3 minutes, pressing gently and covering if needed, until the second side is golden brown and the cheese is fully melted. Total cooking time should be about 5–7 minutes depending on thickness of bread and heat level.
Rest and slice
Transfer the grilled cheese to a cutting board and let it rest for 1 minute—this helps the cheese set slightly and prevents it from spilling out when sliced. Using a sharp knife, slice the sandwich diagonally or down the middle, as desired. Serve immediately.
