cook beef sausage
If using a beef sausage patty or flattened link: heat skillet over medium-high with 1 tsp oil. Cook patty 3–5 minutes per side until nicely browned and cooked through (internal temp ~160°F / 71°C). Drain briefly on paper towels.

Decide which egg style you want: over-easy, over-medium, over-hard, or scrambled. Use the corresponding instructions below.
over-easy / over-medium / over-hard
Heat a nonstick skillet over medium and add 1 tsp neutral oil or butter. Crack 2 large eggs into the skillet. Season with 1/8 tsp black pepper and 1/4 tsp salt. For sunny-side then flip: cook until whites set (~2–3 minutes), gently flip with a spatula and cook an additional 15–30 seconds for over-easy, 45–60 seconds for over-medium, and 1–2 minutes for over-hard until yolk is fully cooked. Remove and keep warm.
scrambled
For scrambled eggs: crack 2 eggs into a bowl, add 1 tbs milk or water, 1/8 tsp black pepper and 1/4 tsp salt; whisk until combined. Heat nonstick skillet over medium-low with 1 tsp butter or oil. Pour eggs in, let set for a few seconds, then gently stir with a spatula, pushing curds from the edges to the center until softly set and slightly creamy, about 1–2 minutes. Remove from heat just before fully firming; residual heat will finish cooking.
Assembly & Finish
If using condiments: spread 1 tsp mayonnaise or mustard on the bottom or top slice of the toasted bread.
Place the cooked meat on the bottom piece of bread. If using bacon, overlap slices; if using sausage, center the patty.
Add the hot egg (with melted cheese if used) on top of the meat.
Add optional extras: 2 slices tomato and/or 1 leaf lettuce if desired.
Close the sandwich with the top piece of bread. Press lightly, cut in half if desired, and serve immediately while hot.
