Method
Prepare Bread & Spreads
Choose bread
Select your preferred bread: two slices of thick-sliced bread, one split Kaiser roll, or one split croissant. If using croissant, be gentle when splitting to avoid tearing.
Lightly butter the cut faces of the bread (about 1/2 tbs per side for slices or 1 tbs split between both halves of a roll/croissant). Set on a plate ready for toasting.
Cook the Egg (choose desired style)
Fried - Sunny-Side Up
Heat a nonstick skillet over medium-low and add 1 tsp oil and 1/2 tbs butter. When butter foams, crack 2 eggs into a small bowl (or directly into the pan spaced apart). Season with 1/8 tsp salt and a light grind of black pepper. Cook gently until whites are mostly set, about 2–3 minutes. Spoon 1 tsp water around the eggs and immediately cover the pan with a lid to steam the tops for 30–45 seconds until whites are fully set but yolks remain runny. Remove with a spatula.
Fried - Over-Easy / Over-Medium
Follow the sunny-side method above but once the whites are set, carefully flip each egg with a thin spatula and cook 10–15 seconds for over-easy (runny yolk) or 30–45 seconds for over-medium (semi-firm yolk). Season and remove.
Scrambled (soft)
Crack the 2 eggs into a bowl, add 1/8 tsp salt and 1 tsp water or milk, and whisk until homogeneous. Heat the skillet over medium-low and melt 1/2 tbs butter. Pour eggs in and let them sit 10–15 seconds, then stir slowly with a spatula, folding the curds until soft and slightly glossy, 1–2 minutes. Remove just before fully set; residual heat will finish them.
Assemble Sandwich
If adding a protein (bacon or ham), warm it in the skillet for 20–30 seconds per side, then layer on the sandwich.
If you prefer a pressed sandwich, return the assembled sandwich to the skillet over low heat, press with a spatula for 30–45 seconds to warm through and slightly crisp the exterior.
Finishing & Serving
Cut the sandwich in half if desired and serve immediately while warm. Provide extra salt and pepper at the table.
Leftovers: refrigerate any unused cooked egg and bread separately in an airtight container for up to 2 days. Reheat gently in a skillet or toaster oven to preserve texture.
