Prep Salmon
Pat the salmon dry with paper towels. Season both sides and the skin lightly with kosher salt and freshly ground black pepper. Let sit at room temperature for 10 minutes while you prepare other ingredients.
Preheat Pan
Heat a large nonstick or stainless-steel skillet over medium-high heat until hot (about 2–3 minutes). Add 1 tablespoon olive oil and swirl to coat.
Sear Skin-Side
Place the salmon fillet skin-side down in the pan. Press gently with a spatula for 10 seconds to prevent curling. Reduce heat to medium and cook skin-side down, undisturbed, for 4–5 minutes until skin is crisp and releases easily from the pan.
Finish Flesh-Side
Flip the fillet and cook flesh-side for 1–2 minutes more for medium doneness (internal temperature ~125–130°F / 52–54°C). If you prefer more well-done, cook up to 3–4 minutes. Remove salmon to a warm plate and tent loosely with foil while you make the sauce.
Lemon-Butter Sauce
Sauté Garlic
Using the same skillet (wipe excess oil if there’s burning residues, leave browned bits), reduce heat to medium-low and add 1 tablespoon butter. Add the minced garlic and cook 20–30 seconds until fragrant, do not brown.
Deglaze
Add 1 tablespoon dry white wine (or stock) to deglaze the pan, scraping up browned bits with a wooden spoon. Let it reduce by half, about 30–45 seconds.
Finish Sauce
Turn heat to low and whisk in remaining 2 tablespoons butter a tablespoon at a time to emulsify. Stir in fresh lemon juice and lemon zest. Season with a pinch of salt and pepper. Remove from heat and stir in chopped parsley. Taste and adjust lemon or salt as needed.
Serve
Spoon the lemon-butter sauce over the rested salmon fillet just before serving.
Sautéed Broccoli
Heat Oil & Aromatics
While salmon is resting and/or during sauce steps, heat a medium sauté pan over medium heat and add 1 tablespoon olive oil. Add sliced shallot and cook 1–2 minutes until softened. Add sliced garlic and cook 30 seconds until fragrant.
Cook Broccoli
Add the broccoli florets and toss to coat in oil. Season with a pinch of salt and pepper. Cook, stirring occasionally, 2 minutes to get a little color.
Steam to Tender
Add 2 tablespoons stock or water, cover the pan, and steam 2–3 minutes until broccoli is bright green and tender-crisp. Uncover and cook off any remaining liquid for 30–60 seconds to concentrate flavor.
Finish & Plate
Adjust seasoning to taste. Transfer broccoli to the plate alongside the salmon. Optionally squeeze a lemon wedge over the broccoli for brightness.
