Preheat and prepare dough
Preheat your oven to 500°F (260°C). If you have a pizza stone, place it in the oven to heat. Lightly oil a pizza peel or baking sheet. On a lightly floured surface, stretch or roll the prepared pizza dough to a 12-inch round (about 1/4 inch thick). Transfer to the prepared peel or sheet and brush the outer 1/2 inch crust lightly with 1 tbs olive oil.
Make blue cheese base
In a small bowl, combine the softened cream cheese (4 oz), mayonnaise (3 tbs), minced garlic (1 tsp), crumbled blue cheese (3 oz), and milk or buttermilk (2 tbs). Season with 1 tsp salt and 1 tsp freshly ground black pepper. Whisk until smooth and spreadable. Taste and adjust seasoning. Spread the blue cheese base evenly over the stretched dough, leaving the outer crust bare (about 1/2 inch).
Buffalo Grilled Chicken
Season and cook chicken
Pat the 12 oz chicken dry. Toss with 1 tbs olive oil, 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder. Heat a grill pan or skillet over medium-high heat. Grill or sear the chicken 4-5 minutes per side until cooked through (internal temperature 165°F/74°C). Remove from heat and let rest 5 minutes.
Toss in buffalo sauce
In a small saucepan or microwave-safe bowl, melt 1 tbs unsalted butter and whisk together with 3 tbs hot sauce until combined. Slice or shred the cooked chicken and toss it in the buffalo sauce so pieces are evenly coated. Set aside.
Toppings & Bake
Assemble pizza
Sprinkle 1 cup shredded mozzarella evenly over the blue cheese base, leaving the crust exposed. Distribute the buffalo-coated grilled chicken pieces over the cheese. Scatter 1/2 cup thinly sliced yellow onion and 1/4 cup banana pepper rings across the pizza. Sprinkle the additional 1 oz crumbled blue cheese on top for pockets of flavor.
Bake
Slide the pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake 8-12 minutes, rotating halfway, until the crust is golden and cheese is bubbling and lightly browned. Baking time will vary by oven and stone; watch closely after 8 minutes.
Finish and serve
Remove the pizza from the oven and let rest 2 minutes. Drizzle with a little ranch or blue cheese dressing (optional) or serve on the side. Garnish with 1 tbs chopped fresh parsley if desired. Slice into 6-8 pieces and serve hot.
