Method

Prepare Bacon

Cook bacon until crisp

Place 6 slices of thick-sliced bacon in a cold skillet in a single layer. Turn heat to medium and cook, flipping occasionally, until bacon is evenly browned and crisp, about 8–12 minutes depending on thickness. For more even crisping, press lightly with a spatula. Transfer bacon to a paper towel–lined plate to drain.

If you want less greasy bacon, after 2–3 minutes on the skillet, drain off excess fat and continue cooking. Reserve 1 teaspoon of bacon fat in the skillet if you prefer to toast the bread in it for extra flavor; otherwise wipe skillet clean.

Wash the lettuce leaves and pat dry thoroughly with paper towels or use a salad spinner. Trim any tough ribs if desired.

Slice the large ripe tomato into 1/4-inch thick slices (about 3–4 slices). Lay slices on paper towel and season lightly with a pinch of salt and a small grind of black pepper to draw out flavor. If using crushed red pepper, sprinkle very lightly on tomato now.

Toast & Assemble Bread

Lightly butter one side of each bread slice if desired. Toast bread in a toaster, under the broiler, or in a skillet (butter-side down) until golden and crisp, about 1–2 minutes per side in a skillet or 2–3 minutes in a toaster/oven. If you reserved bacon fat, you can toast bread in the skillet in 30–45 seconds per side for smoky flavor.

Spread mayonnaise (about 1 tablespoon) evenly on one or both toasted bread slices, depending on preference. If you prefer extra spice, stir 1 teaspoon hot sauce into the mayo before spreading, or drizzle hot sauce directly on the tomato slices.

Assemble Sandwich

Place the dressed bread slice mayo-side up on a clean surface. Lay the lettuce leaves flat on the bread (2 leaves), then arrange the seasoned tomato slices so they cover the lettuce evenly (about 3–4 slices).

Layer the 6 slices of crisp bacon on top of the tomato. If you selected additional black pepper or red pepper flakes, sprinkle a small pinch over the bacon now for added heat.

Top with the second slice of toasted bread, mayo-side down. Press gently to compact the sandwich slightly.

Cut the sandwich in half diagonally or down the middle with a sharp knife. Serve immediately while bacon is warm and bread is crisp.

Optional Serving Suggestions

Serve with extra hot sauce or a small ramekin of mayonnaise for dipping. Offer additional salt and pepper at the table so guests can adjust to taste.
