Preheat and prepare surface

Preheat your oven to 500°F (260°C) and place a pizza stone or an inverted baking sheet on the middle rack. If using a grill, preheat to medium-high and oil the grates. Lightly dust a pizza peel or a work surface with cornmeal or semolina to prevent sticking.

Shape the dough

On the dusted surface, stretch or roll the pizza dough into a 12-inch round, leaving a slightly thicker edge for the crust. Brush the outer 1/2-inch rim lightly with 1 tablespoon olive oil to promote browning.

Sauce & Spread

Mix the barbecue sauce and optional mayonnaise in a small bowl until smooth. This mellows the barbecue and creates a spreadable base. Taste and adjust (add a pinch of salt or a few drops of vinegar if the sauce is very sweet).

Spread the barbecue mixture evenly over the dough, leaving the oiled rim exposed (about 1/2 inch). Use about 3 tablespoons of sauce, spreading to an even layer.

Prepare the chicken: If not already cooked, grill or pan-sear a boneless chicken breast seasoned with salt and pepper, then shred or slice thinly. Toss the cooked chicken with 1 tablespoon of the barbecue sauce to coat lightly (this keeps the chicken moist and ties flavor to the base). Use about 1 to 1 1/2 cups of cooked chicken on the pizza.

Distribute toppings: Evenly sprinkle the shredded mozzarella over the sauced dough (this creates a melty layer). Scatter the barbecue-coated chicken pieces across the pizza, then top with the thinly sliced red onion. Crumble the feta cheese evenly over the top, finishing with pickled jalapeño slices if using. Season lightly with 1/4 tsp salt and 1/4 tsp black pepper.

Bake or grill the pizza: Transfer the prepared pizza to the preheated stone or baking sheet (use a peel or the back of a baking sheet). Bake for 8–10 minutes at 500°F (260°C), rotating once halfway, until the crust is golden and cheese is melted and bubbling. If grilling, place the pizza on the oiled grates over medium-high heat, close the lid, and grill 6–9 minutes until crust is charred in spots and cheese is melted; move to indirect heat if edges brown too fast.

Finish and garnish: Remove the pizza from the oven or grill. Let rest 2 minutes, then sprinkle the chopped cilantro or parsley over the top. Slice and serve immediately.
