Shellfish and Accompaniments

Method

Preparation

1

Prepare the Shrimp

In a large pot of boiling salted water, cook the shrimp for 2-3 minutes until they turn pink. Drain and transfer to an ice bath to stop cooking. Once cooled, drain again and set aside.

2

Prepare the Mussels

In a separate pot, steam the mussels over medium heat for about 5 minutes until they open. Discard any that do not open. Let them cool, then remove from their shells and set aside.

3

Arrange the Shellfish

On a large serving platter or tiered serving tower, arrange the shrimp, king crab legs, shucked oysters, and mussels decoratively. Make sure to leave space between each type of shellfish.

4

Chill the Tower

Fill the base of the tower with crushed ice to keep the shellfish chilled. Place the platter or tiers on top of the ice. Garnish with lemon wedges and fresh herbs, if desired.
