Make Simple Syrup

    Combine and heat

    In a small saucepan combine 1 cup granulated sugar and 1 cup water. Heat over medium, stirring until the sugar fully dissolves and the mixture is clear. Do not boil vigorously; a gentle simmer for 2–3 minutes is sufficient.

    Cool and store

    Remove the syrup from heat and let cool to room temperature. Transfer to a clean jar and refrigerate until cold (about 15–30 minutes) if not using immediately.

Prepare Flavoring

    Citrus

    If using lemon or lime juice, squeeze fresh citrus and strain to remove seeds and pulp. For the recipe amount, combine 2 tbsp lemon juice and 1 tbsp lime juice (or adjust to taste).

    Berry

    If using berries, puree 1 cup fresh or thawed frozen berries in a blender, then strain through a fine-mesh sieve to remove seeds. Measure out about 2–3 tablespoons of the strained puree per 1 cup of soda base when assembling (the ingredient list amount allows making a flavored syrup batch).

    Ginger

    Peel and finely grate fresh ginger and press through a fine sieve or cheesecloth to extract juice. Use about 2 tsp grated or juiced ginger for a mild gingery soda; more if you prefer stronger heat.

    Vanilla or Cola

    Measure out vanilla extract or cola flavoring—1 teaspoon of vanilla adds rounded sweetness and aroma; cola flavoring or a touch of molasses (1 tsp) creates a cola note.

Assemble the Soda Pop

    Chill glass and prepare base

    Chill glasses if desired. Fill each serving glass with about 1/2 cup ice (optional). Ensure your carbonated water is cold for best fizz retention.

    Mix syrup and flavor

    For each 1 cup (240 ml) of carbonated water, add 2–3 tablespoons of the cooled simple syrup (adjust sweetness to taste) and the chosen flavoring: about 1/2 to 1 tablespoon fresh citrus juice OR 2–3 teaspoons strained berry puree OR 1/2–1 teaspoon ginger juice OR 1/8–1/4 teaspoon vanilla/cola flavor. If you're making a full batch using 4 cups carbonated water (ingredient list), combine 1/2 cup simple syrup with your selected flavor additions: 2 tbsp lemon + 1 tbsp lime, or 1/2 cup berry syrup (made by mixing strained puree with equal part simple syrup), or 2 tsp ginger juice + 1/2 cup simple syrup, etc.

    Combine with carbonation

    Pour the measured syrup-and-flavor mixture into a pitcher or individual glasses, then slowly add 4 cups cold carbonated water to the syrup while stirring gently with a long spoon to combine. Stir minimally to retain carbonation—three gentle stirs is usually enough.

    Adjust and finish

    Taste and adjust: add more syrup for sweetness, more citrus for brightness, or a pinch (1/8–1/4 tsp) of baking soda to soften acidity if needed. If using mint or citrus peel, bruise the mint gently and drop into the pitcher or glass; add citrus peel for aroma.

Serve

    Pour soda into chilled glasses over ice if desired. Garnish each glass with a lemon or lime wheel and a sprig of mint. Serve immediately to enjoy maximum fizz.
