Prepare the cheese
If using a block of mozzarella, cut into 12 uniform sticks about 3–4 inches long and 1/2 inch thick. Pat dry with paper towels to remove surface moisture; this helps the coating adhere and prevents excess oil splatter.

Set up dredging stations
Place the flour in a shallow bowl. In a second shallow bowl, whisk together the eggs and milk until smooth. In a third shallow bowl, combine the plain breadcrumbs, panko (if using), grated Parmesan, dried Italian seasoning, garlic powder, salt, and black pepper; mix thoroughly.

Coat the cheese sticks (triple coat)
One at a time: lightly toss a cheese stick in the flour, shaking off excess. Dip into the egg mixture until fully coated, letting excess drip off. Press into the breadcrumb mixture until well coated. For a thicker, more secure crust, place coated sticks on a tray, then repeat the egg and breadcrumb steps a second time (egg, then breadcrumbs) to create a double coating. Arrange coated sticks on a baking sheet lined with parchment and freeze for at least 30 minutes (recommended) or 10–15 minutes in the fridge to firm up; this prevents the cheese from melting out during frying.

Heat the oil
Pour oil into a heavy-bottomed pot or deep skillet to a depth of about 1.5 inches (enough to mostly cover the cheese sticks). Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb into the oil — it should sizzle and turn golden within ~30 seconds.

Fry the cheese sticks
Working in batches (do not overcrowd), carefully add frozen or chilled coated cheese sticks to the hot oil using a slotted spoon or spider. Fry 3–4 sticks at a time for about 1 to 1.5 minutes, turning once, until the coating is golden brown. The cheese will be melted inside — avoid frying too long as that will cause excessive leakage. If using chilled (not frozen) sticks, monitor closely; frying time may be slightly shorter.

Drain
Use a slotted spoon to remove fried cheese sticks to a plate lined with paper towels to absorb excess oil. Let rest 1–2 minutes before serving to let the cheese set slightly.
Marinara Dipping Sauce (optional)

Warm the marinara sauce in a small saucepan over low heat until simmering. Stir in red pepper flakes and fresh basil. Keep warm until ready to serve.
