Marinate the Wings

In a large bowl, combine the hot pepper sauce and buttermilk. Add the chicken wings, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

Prepare the Coating

In a separate bowl, mix together flour, cornstarch, salt, black pepper, paprika, garlic powder, and cayenne pepper.

Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Coat the Wings

Remove the wings from the marinade, allowing excess to drip off. Dredge the wings in the flour mixture, ensuring they are well-coated.

Fry the Wings

Carefully place the coated wings in the hot oil, frying in batches if necessary. Fry for about 10-12 minutes or until golden brown and crispy. Use a thermometer to ensure the internal temperature reaches 165°F (74°C).

Once cooked, remove the wings from the oil and drain on paper towels. Serve hot with bleu cheese dressing and celery sticks.
