Champagne & Base

Chill and Prepare
Ensure both bottles of sparkling wine are well chilled (ideally 45–50°F / 7–10°C). Place orange juice and grapefruit juice in a small pitcher and chill slightly if not already cold.

When ready to serve, pour about 1/4 cup (60 ml) of orange juice into each flute (for 4–5 people adjust to preference: 1/3 cup for fuller juice-forward mimosas). If serving a range of flavors, reserve some juice for topping variations.

Slowly add chilled sparkling wine to each glass, pouring at an angle to preserve bubbles, filling to about 3/4 full. Leave room for toppings and garnishes.

Arrange orange slices, strawberry halves, raspberries, blueberries, and kiwi slices in small bowls for guests to choose from.

Garnish each finished flute with a fruit piece: slip an orange slice on the rim, float a raspberry or two, or drop a few pomegranate seeds into the glass for color and texture.
Syrups & Flavorings

Offer small spoons or a pourer of elderflower liqueur (or syrup) and peach puree at the table. For a flavored mimosa, add 1/2 tablespoon elderflower liqueur or 2 tablespoons peach puree to a glass before adding sparkling wine.

For a slightly sweeter option, stir in up to 2 tsp simple syrup to the juice pitcher or add per-glass to taste.

To make a pomegranate variation: spoon 1–2 tablespoons pomegranate arils and 1 tablespoon pomegranate juice or peach puree into a flute, then top with sparkling wine.

To rim glasses (optional): spread coarse sugar mixed with lemon zest on a small plate. Moisten the rim of each glass with a little orange slice, then dip the rim into the sugar mixture to coat lightly.

Place a mint sprig on each glass for aroma and presentation just before serving.

Suggested Signature Combos
1) Classic: orange juice + sparkling wine + orange slice. 2) Peach Bellini Twist: peach puree + sparkling wine + strawberry. 3) Elderflower Grapefruit: 1/2 tbs elderflower + grapefruit juice + sparkling wine + raspberries. 4) Pomegranate Fizz: pomegranate arils + peach puree + sparkling wine + mint.

Keep extra chilled bottles on ice and replenish juices and toppings as needed. Serve immediately — sparkling wine will lose its effervescence if left standing.
