    Build the base

    In a large pitcher or mixing vessel, combine 180 ml Grey Goose Essences Strawberry & Lemongrass (or 180 ml vodka + 45–60 ml strawberry-lemongrass syrup) with 90 ml Aperol and 90 ml freshly squeezed lime juice. If you prefer a slightly sweeter drink, add 30 ml simple syrup. Stir gently to combine.

    Add ginger beer

    Just before serving, pour 900 ml chilled ginger beer into the pitcher and fold gently once to preserve carbonation. Do not stir vigorously.

    Taste and adjust

    Taste a small sample and, if needed, add up to 15–30 ml more lime juice for brightness or up to 15–30 ml more simple syrup for sweetness. If using plain vodka + syrup instead of the Essences vodka, adjust syrup to balance sweetness.

Assemble & Serve

    Prepare glasses

    Fill 4–6 copper mugs or highball glasses with cubed ice (roughly 1–1.25 cups ice per serving). Add a couple of sliced strawberries and a lime wheel or wedge to each glass. If using, add a bruised lemongrass stalk and a mint sprig to each.

    Pour

    Divide the mixed cocktail evenly among the prepared glasses, pouring over the ice and fruit. Each serving should be roughly 180–225 ml depending on glass size and ice.

    Garnish

    Garnish each glass with an additional strawberry slice and a lime wheel on the rim. Optionally slap the mint lightly between your palms to release aromatics and tuck it into the drink.

    Serve

    Serve immediately while ginger beer is still fizzy. Recommend serving utensils: reusable straws or short cocktail spoons for stirring fruit.
