Prepare the Beans

Rinse the red beans under cold water and soak them overnight in a large bowl with enough water to cover. Drain and set aside.

Cook the Sausage

In a large pot, cook the bear creek sausage over medium heat until browned. Remove the sausage and set aside.

Sauté Vegetables

In the same pot, add onion, green bell pepper, celery, and garlic. Sauté until the vegetables are soft, about 5-7 minutes.

Combine Ingredients

Add the soaked beans, bay leaves, cayenne pepper, salt, black pepper, and water or chicken broth to the pot. Stir to combine.

Simmer

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 2 hours, stirring occasionally, until the beans are tender.

Add Sausage

After 1.5 hours of cooking, return the sausage to the pot and continue cooking for the remaining 30 minutes.

Cook Rice

In a separate pot, cook the long-grain rice according to package instructions.

Serve

Serve the red beans and sausage over the cooked rice, with hushpuppies on the side.
