Prepare the Fries

Peel and cut the Russet potatoes into fry shapes. Rinse them in cold water and pat dry with a towel.

Fry the Potatoes

Heat the vegetable oil in a deep fryer or a heavy pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels. Season with salt.

Make the Spicy Creamy Sauce

In a bowl, combine mayonnaise, Sriracha sauce, lemon juice, garlic powder, salt, and black pepper. Mix well until smooth.

Sauté the Toppings

In a skillet, sauté the sliced mushrooms until browned. Add the crawfish tails and cook for an additional 2-3 minutes until heated through.

Assemble the Bayou Fries

On a serving platter, pile the crispy fries. Drizzle with the spicy creamy sauce, then top with the sautéed crawfish and mushrooms, shredded cheddar cheese, and chopped green onions.
