Prepare the Egg Mixture

In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Sauté the Vegetables

In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the bell pepper and half of the green onions, sautéing until softened, about 2-3 minutes.

Cook the Crawfish

Add the crawfish tails to the skillet and cook for an additional 2 minutes, stirring frequently.

Add the Egg Mixture

Pour the egg mixture over the crawfish and vegetables. Allow it to cook undisturbed for 2-3 minutes until the edges begin to set.

Add Cheese and Finish Cooking

Sprinkle the cheddar cheese on one half of the omelet. Carefully fold the other half over the cheese and cook for another 2-3 minutes until the center is firm and the cheese is melted.

Serve

Gently slide the omelet onto a plate and garnish with the remaining green onions. Serve hot.
