Activate the Yeast
In a small bowl, combine warm water and yeast. Let it sit for about 5 minutes until it becomes frothy.
Mix the Dough
In a large mixing bowl, combine flour, sugar, and salt. Add in the activated yeast mixture, warm milk, eggs, vanilla extract, and melted butter. Mix until a smooth dough forms.
Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until it's smooth and elastic.
Let the Dough Rise
Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.
Shape the Beignets
Once risen, punch down the dough and roll it out to about 1/4 inch thick. Cut into squares or rectangles.
Heat the Oil
In a large pot, heat vegetable oil to 350°F (175°C).
Fry the Beignets
Fry the beignets in batches for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.
Dust with Powdered Sugar
While still warm, dust the beignets generously with powdered sugar.
