Slice and marinate steak
If not pre-sliced, freeze the ribeye for 20–30 minutes until slightly firm and thinly slice across the grain into 1/8–1/4-inch strips. Place the sliced steak in a bowl and add soy sauce, Worcestershire sauce, cornstarch, and 1 tsp black pepper. Toss to coat and let sit 10 minutes while preparing other ingredients. Cornstarch helps the steak brown and stay tender.

Prepare and soften vegetables
Heat 1 tablespoon vegetable oil + 1/2 tablespoon butter in a large skillet over medium heat. Add the sliced onion and bell pepper (and mushrooms, if using) in an even layer. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook, stirring occasionally, 8–10 minutes until onions are soft and beginning to caramelize and peppers and mushrooms are tender. Transfer vegetables to a plate and keep warm.
Cooking the Steak
Sear the steak
Increase the heat to medium-high and add the remaining 1 tablespoon oil to the same skillet. When oil is shimmering, add the marinated steak in a single layer (work in batches if necessary to avoid crowding). Sear without stirring for 30–45 seconds, then stir and cook another 30–60 seconds until just browned but still juicy. Total cook time per batch should be about 1–2 minutes. Remove steak to a plate.
Breads & Assembly
Prepare rolls and melt cheese
Preheat oven broiler or cast-iron skillet. Split hoagie rolls (you can toast cut sides lightly under broiler or in skillet). Divide the steak-vegetable mixture evenly among the 4 rolls. Top each portion with two provolone slices, arranging to cover the filling. Place sandwiches under the broiler for 1–2 minutes (watch closely) or cover skillet with a lid for 30–60 seconds until cheese is melted.
If using mayonnaise or hot sauce, spread mayonnaise on the inside of rolls before adding the filling and/or drizzle hot sauce after assembling. Serve immediately while hot.
